  • Canned diced tomatoes - 400 grams
  • Fresh basil - 10 leaves, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the high-protein penne pasta according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
  4. Pour in the canned diced tomatoes, season with salt and black pepper, and let the sauce simmer for about 10 minutes, stirring occasionally.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add some reserved pasta water until the desired consistency is reached.
  7. Stir in the chopped fresh basil and adjust seasoning if necessary.
  8. Serve hot, topped with grated Parmesan cheese if desired.
