Ingredients
- High-protein penne pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili flakes - 1 teaspoon (adjust to taste)
- Canned diced tomatoes - 400 grams
- Fresh basil - 10 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the high-protein penne pasta according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
- Pour in the canned diced tomatoes, season with salt and black pepper, and let the sauce simmer for about 10 minutes, stirring occasionally.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add some reserved pasta water until the desired consistency is reached.
- Stir in the chopped fresh basil and adjust seasoning if necessary.
- Serve hot, topped with grated Parmesan cheese if desired.
