- Kalamata olives - 100 grams, pitted and sliced
- Capers - 2 tablespoons, rinsed
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the high-protein spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Stir in the canned crushed tomatoes, olives, capers, and red pepper flakes. Season with salt and black pepper to taste. Let the sauce simmer for about 10 minutes, stirring occasionally.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta.
- Add the drained spaghetti to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick.
- Remove from heat and stir in the fresh parsley. Adjust seasoning if needed.
- Serve immediately, garnished with extra parsley if desired.
