  • Canned crushed tomatoes - 400 grams
  • Kalamata olives - 100 grams, pitted and sliced
  • Capers - 2 tablespoons, rinsed
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the high-protein spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Stir in the canned crushed tomatoes, olives, capers, and red pepper flakes. Season with salt and black pepper to taste. Let the sauce simmer for about 10 minutes, stirring occasionally.
  4. Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta.
  5. Add the drained spaghetti to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick.
  6. Remove from heat and stir in the fresh parsley. Adjust seasoning if needed.
  7. Serve immediately, garnished with extra parsley if desired.
