- Pasta (preferably trenette or linguine) - 200 grams
- Onions (yellow) - 300 grams, thinly sliced
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 4 tablespoons
- Fresh basil leaves - 30 grams, chopped
- White wine - 50 ml
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, and cook slowly, stirring occasionally, for about 20 minutes until they are caramelized and golden.
- Add the minced garlic to the skillet and cook for an additional 2 minutes until fragrant.
- Pour in the white wine and let it simmer until mostly evaporated, about 3-4 minutes.
- Add the vegetable broth and chopped basil to the skillet, stirring to combine. Allow the sauce to simmer for another 10 minutes to blend the flavors.
- Meanwhile, cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water before draining.
- Combine the drained pasta with the onion sauce in the skillet, adding a little reserved pasta water if needed to reach desired consistency. Season with salt and black pepper to taste.
- Serve immediately, garnished with additional fresh basil if desired.
