Ingredients

  • Pasta (preferably trenette or linguine) - 200 grams
  • Onions (yellow) - 300 grams, thinly sliced
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 4 tablespoons
  • Fresh basil leaves - 30 grams, chopped
  • White wine - 50 ml
  • Vegetable broth - 200 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, and cook slowly, stirring occasionally, for about 20 minutes until they are caramelized and golden.
  2. Add the minced garlic to the skillet and cook for an additional 2 minutes until fragrant.
  3. Pour in the white wine and let it simmer until mostly evaporated, about 3-4 minutes.
  4. Add the vegetable broth and chopped basil to the skillet, stirring to combine. Allow the sauce to simmer for another 10 minutes to blend the flavors.
  5. Meanwhile, cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water before draining.
  6. Combine the drained pasta with the onion sauce in the skillet, adding a little reserved pasta water if needed to reach desired consistency. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with additional fresh basil if desired.
