Ingredients

  • High-protein pasta (e.g., lentil or chickpea pasta) - 200 grams
  • Heavy cream - 100 ml
  • Truffle oil - 1 tablespoon
  • Parmesan cheese, grated - 50 grams
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Optional: Truffle shavings - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the high-protein pasta according to package instructions until al dente.
  2. While the pasta cooks, heat a saucepan over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn.
  3. Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
  4. Add the grated Parmesan cheese to the cream, stirring until melted and combined. Season with salt and black pepper to taste.
  5. Once the pasta is cooked, reserve a small cup of pasta water and drain the rest. Add the drained pasta to the creamy sauce, tossing to coat.
  6. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
  7. Drizzle in the truffle oil and mix well to incorporate the flavor.
  8. Serve immediately, garnished with fresh parsley and optional truffle shavings.
