Ingredients

  • Whole grain spaghetti - 160 grams
  • Greek yogurt - 100 grams
  • Fresh lemon juice - 40 ml
  • Lemon zest - 1 tablespoon
  • Parmesan cheese, grated - 30 grams
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole grain spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. In a bowl, combine Greek yogurt, lemon juice, lemon zest, grated Parmesan cheese, and season with salt and black pepper.
  4. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta.
  5. In the pan with garlic, add the drained pasta and the yogurt mixture, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Remove from heat and stir in chopped parsley. Adjust seasoning if needed.
  7. Serve immediately, garnished with extra Parmesan and parsley if desired.
