- Whole grain spaghetti - 160 grams
- Greek yogurt - 100 grams
- Fresh lemon juice - 40 ml
- Lemon zest - 1 tablespoon
- Parmesan cheese, grated - 30 grams
- Olive oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the whole grain spaghetti according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- In a bowl, combine Greek yogurt, lemon juice, lemon zest, grated Parmesan cheese, and season with salt and black pepper.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta.
- In the pan with garlic, add the drained pasta and the yogurt mixture, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Remove from heat and stir in chopped parsley. Adjust seasoning if needed.
- Serve immediately, garnished with extra Parmesan and parsley if desired.
