  • Whole wheat penne pasta - 200 grams
  • Lean ground turkey - 200 grams
  • Canned diced tomatoes - 400 grams
  • Low-fat ricotta cheese - 150 grams
  • Grated Parmesan cheese - 50 grams
  • Fresh spinach - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large pot, cook the whole wheat penne pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the canned diced tomatoes, Italian seasoning, salt, and black pepper. Let simmer for 10 minutes, allowing the flavors to meld.
  6. In a large bowl, combine the cooked pasta, turkey and tomato mixture, fresh spinach, and ricotta cheese. Mix until well combined.
  7. Transfer the pasta mixture into a baking dish and sprinkle grated Parmesan cheese evenly on top.
  8. Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
  9. Remove from the oven, let it cool for a few minutes, then serve warm.
