- Lean ground turkey - 200 grams
- Canned diced tomatoes - 400 grams
- Low-fat ricotta cheese - 150 grams
- Grated Parmesan cheese - 50 grams
- Fresh spinach - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a large pot, cook the whole wheat penne pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the canned diced tomatoes, Italian seasoning, salt, and black pepper. Let simmer for 10 minutes, allowing the flavors to meld.
- In a large bowl, combine the cooked pasta, turkey and tomato mixture, fresh spinach, and ricotta cheese. Mix until well combined.
- Transfer the pasta mixture into a baking dish and sprinkle grated Parmesan cheese evenly on top.
- Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
- Remove from the oven, let it cool for a few minutes, then serve warm.
