- coconut milk - 400 ml
- agar-agar powder - 1 teaspoon
- maple syrup - 60 ml
- vanilla extract - 1 teaspoon
- fresh berries (for coulis) - 100 grams
- lemon juice - 1 tablespoon
- water - 50 ml
- coconut cream (for garnish) - 2 tablespoons
Steps
- In a saucepan, combine the coconut milk, agar-agar powder, maple syrup, and vanilla extract. Whisk together until well mixed.
- Heat the mixture over medium heat, stirring continuously until it begins to boil. Once it reaches a boil, reduce heat and let it simmer for 2 minutes.
- Remove the saucepan from heat and pour the mixture into two serving glasses. Allow it to cool to room temperature before transferring to the refrigerator.
- Chill in the refrigerator for at least 4 hours or until set.
- While the panna cotta is setting, prepare the berry coulis by blending the fresh berries, lemon juice, and water until smooth. Strain through a sieve to remove seeds if desired.
- Once the panna cotta has set, remove from the refrigerator and top with a generous spoonful of berry coulis and a dollop of coconut cream before serving.
