Ingredients

  • coconut milk - 400 ml
  • agar-agar powder - 1 teaspoon
  • maple syrup - 60 ml
  • vanilla extract - 1 teaspoon
  • fresh berries (for coulis) - 100 grams
  • lemon juice - 1 tablespoon
  • water - 50 ml
  • coconut cream (for garnish) - 2 tablespoons

Steps

  1. In a saucepan, combine the coconut milk, agar-agar powder, maple syrup, and vanilla extract. Whisk together until well mixed.
  2. Heat the mixture over medium heat, stirring continuously until it begins to boil. Once it reaches a boil, reduce heat and let it simmer for 2 minutes.
  3. Remove the saucepan from heat and pour the mixture into two serving glasses. Allow it to cool to room temperature before transferring to the refrigerator.
  4. Chill in the refrigerator for at least 4 hours or until set.
  5. While the panna cotta is setting, prepare the berry coulis by blending the fresh berries, lemon juice, and water until smooth. Strain through a sieve to remove seeds if desired.
  6. Once the panna cotta has set, remove from the refrigerator and top with a generous spoonful of berry coulis and a dollop of coconut cream before serving.
