  • Heavy cream - 100 milliliters
  • Milk - 100 milliliters
  • Honey - 30 grams
  • Gelatin powder - 5 grams
  • Lavender flowers (dried) - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold milk and let it bloom for about 5 minutes.
  2. In a saucepan, combine the heavy cream, remaining milk, honey, dried lavender, and a pinch of salt. Heat gently over medium heat until just simmering, then remove from heat.
  3. Add the bloomed gelatin to the warm cream mixture, stirring until fully dissolved.
  4. Stir in the Greek yogurt and vanilla extract until smooth and well combined.
  5. Strain the mixture through a fine sieve into two serving glasses to remove the lavender flowers.
  6. Cover the glasses with plastic wrap and refrigerate for at least 4 hours or until set.
  7. Once set, serve chilled, garnished with a sprinkle of fresh lavender or a drizzle of honey if desired.
