Ingredients

  • Coconut milk - 200 ml
  • Agar-agar powder - 1 teaspoon
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Mixed berries (strawberries, blueberries, raspberries) - 150 grams
  • Lemon juice - 1 tablespoon
  • Water - 50 ml

Steps

  1. In a small saucepan, combine the coconut milk, agar-agar powder, maple syrup, and vanilla extract. Heat over medium heat while stirring until it reaches a gentle simmer. Continue to simmer for 2-3 minutes until the agar-agar is fully dissolved.
  2. Remove the saucepan from heat, and pour the mixture into two serving glasses or molds. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set.
  3. While the panna cotta is chilling, prepare the fruit coulis. In a blender, combine the mixed berries, lemon juice, and water. Blend until smooth, then strain through a fine mesh sieve to remove the seeds if desired.
  4. Once the panna cotta is set, carefully remove it from the molds (if using) and pour the berry coulis over the top.
  5. Serve chilled, garnished with additional fresh berries or mint leaves if desired.
