- Coconut milk - 200 ml
- Agar-agar powder - 1 teaspoon
- Maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Mixed berries (strawberries, blueberries, raspberries) - 150 grams
- Lemon juice - 1 tablespoon
- Water - 50 ml
Steps
- In a small saucepan, combine the coconut milk, agar-agar powder, maple syrup, and vanilla extract. Heat over medium heat while stirring until it reaches a gentle simmer. Continue to simmer for 2-3 minutes until the agar-agar is fully dissolved.
- Remove the saucepan from heat, and pour the mixture into two serving glasses or molds. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set.
- While the panna cotta is chilling, prepare the fruit coulis. In a blender, combine the mixed berries, lemon juice, and water. Blend until smooth, then strain through a fine mesh sieve to remove the seeds if desired.
- Once the panna cotta is set, carefully remove it from the molds (if using) and pour the berry coulis over the top.
- Serve chilled, garnished with additional fresh berries or mint leaves if desired.
