Ingredients
- Heavy cream - 200 ml
- Whole milk - 100 ml
- Granulated sugar - 50 g
- Vanilla bean - 1 (or 1 tsp vanilla extract)
- Gelatin sheets - 1 (or 1 tsp powdered gelatin)
- Fresh mixed berries (strawberries, blueberries, raspberries) - 100 g
- Lemon juice - 1 tsp
- Powdered sugar - 1 tbsp (for coulis)
Steps
- Soak the gelatin sheet in cold water for about 5 minutes until soft. If using powdered gelatin, sprinkle it over 2 tablespoons of cold water and let it bloom for the same time.
- In a saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla bean (split and seeds scraped) over medium heat. Stir until the sugar is dissolved and the mixture is just about to boil.
- Remove the saucepan from heat. Squeeze excess water from the gelatin sheet (or add bloomed powdered gelatin) and stir it into the warm cream mixture until fully dissolved.
- Pour the mixture into two small serving glasses or ramekins. Allow it to cool to room temperature, then refrigerate for at least 4 hours or until set.
- For the berry coulis, blend the fresh mixed berries with lemon juice and powdered sugar until smooth. Strain through a fine sieve if desired to remove seeds.
- Once the panna cotta is set, carefully run a knife around the edges and invert onto a plate, or serve directly in the glasses. Drizzle the berry coulis on top and enjoy!
