Ingredients

  • chickpea flour - 120 grams
  • water - 500 milliliters
  • olive oil - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh rosemary - 1 tablespoon, chopped
  • nutritional yeast - 2 tablespoons
  • cornstarch - for dusting

Steps

  1. In a medium saucepan, bring the water to a boil. Once boiling, add salt and olive oil.
  2. Gradually whisk in the chickpea flour, stirring continuously to avoid lumps. Cook over medium heat for about 5-7 minutes until the mixture thickens and pulls away from the sides of the pan.
  3. Remove from heat and stir in black pepper, chopped rosemary, and nutritional yeast until well combined.
  4. Transfer the mixture to a greased rectangular dish (approximately 20x10 cm) and spread evenly. Allow to cool for about 30 minutes at room temperature until set.
  5. Once set, cut the mixture into rectangular pieces or sticks.
  6. Dust each piece lightly with cornstarch to prevent sticking.
  7. In a skillet, heat olive oil over medium heat. Fry the pieces of panisse for about 3-4 minutes on each side or until golden brown and crispy.
  8. Drain on paper towels and serve warm.
