Ingredients
- chickpea flour - 120 grams
- water - 500 milliliters
- olive oil - 2 tablespoons
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh rosemary - 1 tablespoon, chopped
- nutritional yeast - 2 tablespoons
- cornstarch - for dusting
Steps
- In a medium saucepan, bring the water to a boil. Once boiling, add salt and olive oil.
- Gradually whisk in the chickpea flour, stirring continuously to avoid lumps. Cook over medium heat for about 5-7 minutes until the mixture thickens and pulls away from the sides of the pan.
- Remove from heat and stir in black pepper, chopped rosemary, and nutritional yeast until well combined.
- Transfer the mixture to a greased rectangular dish (approximately 20x10 cm) and spread evenly. Allow to cool for about 30 minutes at room temperature until set.
- Once set, cut the mixture into rectangular pieces or sticks.
- Dust each piece lightly with cornstarch to prevent sticking.
- In a skillet, heat olive oil over medium heat. Fry the pieces of panisse for about 3-4 minutes on each side or until golden brown and crispy.
- Drain on paper towels and serve warm.
