  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh rosemary - 1 tablespoon, chopped
  • lemon zest - 1 teaspoon
  • cornstarch - 50 grams (for dusting)
  • fresh salad greens - 100 grams (for serving)
  • lemon wedges - 2 (for serving)

Steps

  1. In a medium saucepan, bring the water to a boil and add the salt, garlic powder, and olive oil.
  2. Gradually whisk in the chickpea flour, stirring constantly to prevent lumps from forming.
  3. Cook the mixture over medium heat for about 5-7 minutes until it thickens and pulls away from the sides of the pan.
  4. Remove from heat and stir in the chopped rosemary and lemon zest.
  5. Pour the mixture into a greased rectangular dish and spread it evenly. Let it cool for about 15 minutes at room temperature.
  6. Once set, cut the chickpea mixture into rectangular pieces.
  7. Dust each piece lightly with cornstarch to prevent sticking.
  8. In a non-stick skillet, heat a tablespoon of olive oil over medium heat. Fry the panisse pieces for about 3-4 minutes on each side until golden brown and crispy.
  9. Serve hot with a side of fresh salad greens and lemon wedges.
