- chickpea flour - 150 grams
- water - 500 milliliters
- olive oil - 2 tablespoons
- garlic powder - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh rosemary - 1 tablespoon, chopped
- lemon zest - 1 teaspoon
- cornstarch - 50 grams (for dusting)
- fresh salad greens - 100 grams (for serving)
- lemon wedges - 2 (for serving)
Steps
- In a medium saucepan, bring the water to a boil and add the salt, garlic powder, and olive oil.
- Gradually whisk in the chickpea flour, stirring constantly to prevent lumps from forming.
- Cook the mixture over medium heat for about 5-7 minutes until it thickens and pulls away from the sides of the pan.
- Remove from heat and stir in the chopped rosemary and lemon zest.
- Pour the mixture into a greased rectangular dish and spread it evenly. Let it cool for about 15 minutes at room temperature.
- Once set, cut the chickpea mixture into rectangular pieces.
- Dust each piece lightly with cornstarch to prevent sticking.
- In a non-stick skillet, heat a tablespoon of olive oil over medium heat. Fry the panisse pieces for about 3-4 minutes on each side until golden brown and crispy.
- Serve hot with a side of fresh salad greens and lemon wedges.
