Ingredients
- chickpea flour - 150 grams
- water - 500 milliliters
- olive oil - 2 tablespoons
- sea salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh rosemary - 1 tablespoon, chopped (optional)
- cornstarch - for dusting
- lemon wedges - for serving
Steps
- In a medium saucepan, combine 500 milliliters of water, 1 teaspoon of sea salt, and 2 tablespoons of olive oil. Bring to a boil over medium heat.
- Once boiling, gradually whisk in 150 grams of chickpea flour, stirring continuously to prevent lumps from forming. Continue stirring for about 5 minutes until the mixture thickens and pulls away from the sides of the pan.
- Remove the saucepan from heat and stir in 1/2 teaspoon of black pepper and the chopped rosemary (if using).
- Transfer the mixture to a greased rectangular dish (about 20x10 cm) and spread it out evenly. Let it cool to room temperature, then refrigerate for at least 30 minutes to set.
- Once set, remove the mixture from the dish and cut it into rectangular or triangular pieces, about 1 cm thick.
- Lightly dust each piece with cornstarch to prevent sticking.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the panisse pieces and fry for about 3-4 minutes on each side until golden brown and crispy.
- Serve hot with lemon wedges on the side for squeezing over the panisse.
