Ingredients

  • chickpea flour - 150 grams
  • water - 500 milliliters
  • olive oil - 2 tablespoons
  • sea salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh rosemary - 1 tablespoon, chopped (optional)
  • cornstarch - for dusting
  • lemon wedges - for serving

Steps

  1. In a medium saucepan, combine 500 milliliters of water, 1 teaspoon of sea salt, and 2 tablespoons of olive oil. Bring to a boil over medium heat.
  2. Once boiling, gradually whisk in 150 grams of chickpea flour, stirring continuously to prevent lumps from forming. Continue stirring for about 5 minutes until the mixture thickens and pulls away from the sides of the pan.
  3. Remove the saucepan from heat and stir in 1/2 teaspoon of black pepper and the chopped rosemary (if using).
  4. Transfer the mixture to a greased rectangular dish (about 20x10 cm) and spread it out evenly. Let it cool to room temperature, then refrigerate for at least 30 minutes to set.
  5. Once set, remove the mixture from the dish and cut it into rectangular or triangular pieces, about 1 cm thick.
  6. Lightly dust each piece with cornstarch to prevent sticking.
  7. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the panisse pieces and fry for about 3-4 minutes on each side until golden brown and crispy.
  8. Serve hot with lemon wedges on the side for squeezing over the panisse.
