  • plant-based milk - 200 ml

  • cinnamon - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • maple syrup - 2 tablespoons
  • salt - 1/4 teaspoon
  • coconut oil - for frying

Steps

  1. In a mixing bowl, mash the ripe banana until smooth.
  2. Add the plant-based milk, maple syrup, and vanilla extract to the mashed banana, and mix until well combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; small lumps are fine.
  5. Heat a non-stick frying pan over medium heat and add a small amount of coconut oil.
  6. Pour about 1/4 cup of batter for each pancake onto the pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, adding more coconut oil to the pan as needed.
