- plant-based milk - 200 ml
- baking powder - 10 grams
- cinnamon - 1 teaspoon
- vanilla extract - 1 teaspoon
- maple syrup - 2 tablespoons
- salt - 1/4 teaspoon
- coconut oil - for frying
Steps
- In a mixing bowl, mash the ripe banana until smooth.
- Add the plant-based milk, maple syrup, and vanilla extract to the mashed banana, and mix until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; small lumps are fine.
- Heat a non-stick frying pan over medium heat and add a small amount of coconut oil.
- Pour about 1/4 cup of batter for each pancake onto the pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more coconut oil to the pan as needed.
- Serve warm with additional maple syrup, fresh fruit, or your favorite vegan toppings.
