Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Arrowroot powder - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Coconut oil - 2 tablespoons, melted
  • Honey - 2 tablespoons
  • Cinnamon - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, arrowroot powder, and salt until well mixed.
  3. In another bowl, whisk together the egg, melted coconut oil, honey, and cinnamon until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  6. Fold the edges of the rectangle toward the center, then fold in half to create layers, similar to a book.
  7. Slice the rolled dough into 1 cm thick pieces and arrange them cut-side up on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  9. Allow to cool slightly before serving.
