Ingredients
- Pita bread - 2 pieces
- Boneless chicken thighs - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lettuce - 50 grams, shredded
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Yogurt - 4 tablespoons
- Fresh mint - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix olive oil, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
- Add the boneless chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C.
- While the chicken is grilling, prepare the yogurt sauce by combining yogurt, chopped mint, and lemon juice in a small bowl. Mix well and set aside.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it into strips.
- Warm the pita bread on the grill for 1-2 minutes on each side until slightly toasted.
- To assemble, place sliced grilled chicken in the warm pita, then add shredded lettuce, diced tomato, and cucumber.
- Drizzle the yogurt sauce over the filling and fold the pita in half before serving.
