Ingredients

  • All-purpose flour - 250 grams
  • Almond milk - 150 ml
  • Coconut sugar - 30 grams
  • Instant yeast - 7 grams
  • Salt - 5 grams
  • Vegetable oil - 30 ml
  • Vanilla extract - 1 teaspoon
  • Aquafaba (chickpea brine) - 2 tablespoons

Steps

  1. In a large mixing bowl, combine the warm almond milk, coconut sugar, and instant yeast. Let it sit for about 5-10 minutes until bubbly.
  2. Add the all-purpose flour, salt, vegetable oil, vanilla extract, and aquafaba to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
  5. Preheat the oven to 180°C (350°F).
  6. After the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a small ball.
  7. Place the dough balls on a baking tray lined with parchment paper, leaving space between them. Cover and let rise for another 15 minutes.
  8. Bake in the preheated oven for 15-20 minutes, or until golden brown. Let cool slightly before serving.
