Ingredients

  • All-purpose flour - 250 grams
  • Almond milk (or any plant-based milk) - 150 ml
  • Coconut sugar - 30 grams
  • Active dry yeast - 7 grams
  • Vegan butter - 30 grams, melted
  • Salt - 5 grams
  • Vanilla extract - 1 teaspoon
  • Aquafaba (chickpea brine) - 2 tablespoons

Steps

  1. In a small bowl, warm the almond milk to about 37°C (98°F) and dissolve the active dry yeast with 1 teaspoon of coconut sugar. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine the flour, remaining coconut sugar, and salt. Make a well in the center and add the yeast mixture, melted vegan butter, vanilla extract, and aquafaba.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 180°C (350°F). Once the dough has risen, punch it down and divide it into 6 equal pieces. Shape each piece into a roll and place them on a lined baking tray.
  6. Cover the rolls with a cloth and let them rise again for about 30 minutes.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown. Allow to cool slightly before serving.
