Ingredients
- All-purpose flour - 250 grams
- Vegan butter - 150 grams, cold
- Cold water - 100 ml
- Sugar - 25 grams
- Salt - 5 grams
- Instant yeast - 7 grams
- Dark chocolate (vegan) - 100 grams, chopped
- Plant-based milk (for brushing) - 30 ml
Steps
- In a bowl, mix the flour, sugar, salt, and instant yeast together.
- Cut the cold vegan butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until a dough forms. Avoid overworking the dough.
- Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough into a larger rectangle, about 1 cm thick.
- Fold the dough into thirds, like a letter, and roll it out again. Repeat this process 2 more times, chilling the dough for 15 minutes between folds.
- After the final fold, roll the dough out to about 5 mm thick. Cut the dough into rectangles, approximately 10 cm x 15 cm.
- Place a few pieces of chopped dark chocolate on one half of each rectangle, then fold the other half over to cover the chocolate.
- Seal the edges by pressing gently and place the pastries on a baking sheet lined with parchment paper. Brush the tops with plant-based milk.
- Preheat the oven to 200°C (390°F) and let the pastries rise for about 20 minutes while the oven heats.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
