Ingredients

  • All-purpose flour - 250 grams
  • Vegan butter - 150 grams, cold
  • Cold water - 100 ml
  • Sugar - 25 grams
  • Salt - 5 grams
  • Instant yeast - 7 grams
  • Dark chocolate (vegan) - 100 grams, chopped
  • Plant-based milk (for brushing) - 30 ml

Steps

  1. In a bowl, mix the flour, sugar, salt, and instant yeast together.
  2. Cut the cold vegan butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, mixing until a dough forms. Avoid overworking the dough.
  4. Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. On a lightly floured surface, roll out the dough into a larger rectangle, about 1 cm thick.
  6. Fold the dough into thirds, like a letter, and roll it out again. Repeat this process 2 more times, chilling the dough for 15 minutes between folds.
  7. After the final fold, roll the dough out to about 5 mm thick. Cut the dough into rectangles, approximately 10 cm x 15 cm.
  8. Place a few pieces of chopped dark chocolate on one half of each rectangle, then fold the other half over to cover the chocolate.
  9. Seal the edges by pressing gently and place the pastries on a baking sheet lined with parchment paper. Brush the tops with plant-based milk.
  10. Preheat the oven to 200°C (390°F) and let the pastries rise for about 20 minutes while the oven heats.
  11. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
