- Chickpea flour - 100 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Mushrooms - 100 grams, sliced
- Spinach - 50 grams, fresh
- Garlic - 1 clove, minced
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- In a mixing bowl, whisk together chickpea flour, water, 1 tablespoon of olive oil, salt, and black pepper until smooth. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. Pour a ladle of the chickpea batter into the skillet and swirl to form a thin crepe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes until golden. Repeat with the remaining batter, placing cooked crepes on a plate.
- In the same skillet, add the remaining olive oil and sauté garlic for 30 seconds. Add zucchini, red bell pepper, and mushrooms, cooking for 5-7 minutes until tender. Stir in the spinach and cumin, cooking for an additional 2 minutes until spinach wilts. Season with salt and pepper to taste.
- In a small bowl, mix tahini with lemon juice and a splash of water to create a drizzling sauce. Adjust consistency with more water if necessary.
- To serve, place a generous amount of sautéed vegetables on each chickpea crepe, fold or roll, and drizzle with tahini sauce. Garnish with fresh parsley.
