  • Fresh chives - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon (for cooking)
  • Avocado - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon (for salad)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a mixing bowl, whisk together chickpea flour, water, turmeric powder, salt, and black pepper until smooth. Let the batter rest for 10 minutes.
  2. Meanwhile, prepare the avocado-tomato salad by combining diced avocado, halved cherry tomatoes, lemon juice, olive oil, salt, and pepper in a separate bowl. Toss gently and set aside.
  3. Heat a non-stick skillet over medium heat and add olive oil. Once hot, pour a ladleful of the chickpea batter into the skillet, spreading it gently into a pancake shape.
  4. Cook the pancake for about 3-4 minutes until bubbles form on the surface, then sprinkle chopped parsley and chives on top. Flip and cook for an additional 3-4 minutes until golden brown.
  5. Repeat the process with the remaining batter, adding more oil to the skillet as needed.
  6. Serve the chickpea pancakes warm with the avocado-tomato salad on the side.
