- Olive oil - 1 tablespoon (for cooking)
- Avocado - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon (for salad)
- Salt - to taste
- Pepper - to taste
Steps
- In a mixing bowl, whisk together chickpea flour, water, turmeric powder, salt, and black pepper until smooth. Let the batter rest for 10 minutes.
- Meanwhile, prepare the avocado-tomato salad by combining diced avocado, halved cherry tomatoes, lemon juice, olive oil, salt, and pepper in a separate bowl. Toss gently and set aside.
- Heat a non-stick skillet over medium heat and add olive oil. Once hot, pour a ladleful of the chickpea batter into the skillet, spreading it gently into a pancake shape.
- Cook the pancake for about 3-4 minutes until bubbles form on the surface, then sprinkle chopped parsley and chives on top. Flip and cook for an additional 3-4 minutes until golden brown.
- Repeat the process with the remaining batter, adding more oil to the skillet as needed.
- Serve the chickpea pancakes warm with the avocado-tomato salad on the side.
