  • Water - 125 ml
  • Unsalted margarine - 50 g
  • All-purpose flour - 75 g
  • Eggs - 2 large
  • Sugar - 50 g
  • Vanilla extract - 1 tsp
  • Kosher cream (or non-dairy whipped topping) - 200 ml
  • Cornstarch - 1 tbsp
  • Granulated sugar for caramel - 100 g
  • Glucose syrup - 30 g

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a saucepan, combine water and margarine over medium heat until the margarine melts.
  3. Once boiling, remove from heat and quickly stir in flour until it forms a dough.
  4. Return the pan to low heat for 2-3 minutes to dry out the dough slightly.
  5. Transfer the dough to a mixing bowl and let it cool for a few minutes.
  6. Add eggs one at a time, mixing well after each addition until the dough is shiny and smooth.
  7. Pipe small circles (about 3 cm) onto a baking sheet lined with parchment paper for the choux puffs.
  8. Bake for 20-25 minutes until golden and puffed; let cool.
  9. In a separate bowl, beat the kosher cream with sugar and vanilla until soft peaks form.
  10. Fill the cooled choux puffs with the whipped cream using a piping bag.
  11. For the caramel, heat granulated sugar and glucose syrup in a saucepan over medium heat until it melts and turns golden.
  12. Dip the tops of the filled choux puffs into the caramel and place them upright on a serving plate.
  13. Drizzle any remaining caramel over the assembled pastries and let it set for a few minutes before serving.
