- Cornstarch - 1 tbsp
- Granulated sugar for caramel - 100 g
- Glucose syrup - 30 g
Steps
- Preheat the oven to 200°C (390°F).
- In a saucepan, combine water and margarine over medium heat until the margarine melts.
- Once boiling, remove from heat and quickly stir in flour until it forms a dough.
- Return the pan to low heat for 2-3 minutes to dry out the dough slightly.
- Transfer the dough to a mixing bowl and let it cool for a few minutes.
- Add eggs one at a time, mixing well after each addition until the dough is shiny and smooth.
- Pipe small circles (about 3 cm) onto a baking sheet lined with parchment paper for the choux puffs.
- Bake for 20-25 minutes until golden and puffed; let cool.
- In a separate bowl, beat the kosher cream with sugar and vanilla until soft peaks form.
- Fill the cooled choux puffs with the whipped cream using a piping bag.
- For the caramel, heat granulated sugar and glucose syrup in a saucepan over medium heat until it melts and turns golden.
- Dip the tops of the filled choux puffs into the caramel and place them upright on a serving plate.
- Drizzle any remaining caramel over the assembled pastries and let it set for a few minutes before serving.
