Ingredients

  • Water - 150 ml
  • Unsalted butter - 50 g
  • Gluten-free flour blend - 75 g
  • Eggs - 3 large
  • Sugar - 30 g
  • Ground hazelnuts - 50 g
  • Heavy cream - 150 ml
  • Vanilla extract - 1 tsp
  • Powdered sugar - for dusting
  • Salt - a pinch

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and a pinch of salt. Bring to a boil, then remove from heat.
  3. Add the gluten-free flour blend all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Allow the mixture to cool for 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Transfer the dough to a piping bag fitted with a large round tip and pipe a ring about 10 cm in diameter onto the prepared baking sheet.
  6. Bake for 25-30 minutes until golden brown and puffed. Turn off the oven and let it cool inside for 10 minutes.
  7. While the pastry cools, prepare the hazelnut cream by whipping the heavy cream until soft peaks form, then fold in the ground hazelnuts, sugar, and vanilla extract.
  8. Once the pastry has cooled, slice it in half horizontally and fill the bottom half with the hazelnut cream.
  9. Replace the top half of the pastry, dust with powdered sugar, and serve immediately.
