- Water - 150 ml
- Unsalted butter - 50 g
- Gluten-free flour blend - 75 g
- Eggs - 3 large
- Sugar - 30 g
- Ground hazelnuts - 50 g
- Heavy cream - 150 ml
- Vanilla extract - 1 tsp
- Powdered sugar - for dusting
- Salt - a pinch
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, and a pinch of salt. Bring to a boil, then remove from heat.
- Add the gluten-free flour blend all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Allow the mixture to cool for 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a large round tip and pipe a ring about 10 cm in diameter onto the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and puffed. Turn off the oven and let it cool inside for 10 minutes.
- While the pastry cools, prepare the hazelnut cream by whipping the heavy cream until soft peaks form, then fold in the ground hazelnuts, sugar, and vanilla extract.
- Once the pastry has cooled, slice it in half horizontally and fill the bottom half with the hazelnut cream.
- Replace the top half of the pastry, dust with powdered sugar, and serve immediately.
