Ingredients
- Almond flour - 100 grams
- Powdered sugar - 100 grams
- Eggs - 3 large
- Unsweetened cocoa powder - 20 grams
- Butter - 100 grams (softened)
- Granulated sugar - 50 grams
- Espresso coffee - 50 ml (strongly brewed)
- Dark chocolate (70% cocoa) - 100 grams
- Heavy cream - 100 ml
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F). Line a 20 cm square baking pan with parchment paper.
- In a mixing bowl, combine almond flour, powdered sugar, and cocoa powder.
- In another bowl, whisk the eggs and granulated sugar until light and fluffy, about 5 minutes.
- Fold the dry ingredients into the egg mixture gently until just combined.
- Spread the batter evenly into the prepared baking pan and bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- Once baked, let the sponge cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the ganache, heat the heavy cream in a saucepan until just simmering, then pour it over the chopped dark chocolate in a bowl. Let it sit for 2 minutes, then stir until smooth.
- For the coffee buttercream, beat the softened butter in a bowl until creamy, then gradually add the powdered sugar and espresso, mixing until smooth and fluffy.
- Once the sponge is cool, cut it into two equal rectangles. Soak each piece with a little bit of espresso.
- Layer one piece of sponge on a serving plate, spread a layer of coffee buttercream, then a layer of chocolate ganache. Repeat with the second piece of sponge and finish with more ganache on top.
- Chill in the refrigerator for at least 15 minutes before serving. Decorate with chocolate shavings if desired.
