Ingredients

  • Almond flour - 100 grams
  • Powdered sugar - 100 grams
  • Eggs - 3 large
  • Unsweetened cocoa powder - 20 grams
  • Butter - 100 grams (softened)
  • Granulated sugar - 50 grams
  • Espresso coffee - 50 ml (strongly brewed)
  • Dark chocolate (70% cocoa) - 100 grams
  • Heavy cream - 100 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F). Line a 20 cm square baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, powdered sugar, and cocoa powder.
  3. In another bowl, whisk the eggs and granulated sugar until light and fluffy, about 5 minutes.
  4. Fold the dry ingredients into the egg mixture gently until just combined.
  5. Spread the batter evenly into the prepared baking pan and bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  6. Once baked, let the sponge cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. For the ganache, heat the heavy cream in a saucepan until just simmering, then pour it over the chopped dark chocolate in a bowl. Let it sit for 2 minutes, then stir until smooth.
  8. For the coffee buttercream, beat the softened butter in a bowl until creamy, then gradually add the powdered sugar and espresso, mixing until smooth and fluffy.
  9. Once the sponge is cool, cut it into two equal rectangles. Soak each piece with a little bit of espresso.
  10. Layer one piece of sponge on a serving plate, spread a layer of coffee buttercream, then a layer of chocolate ganache. Repeat with the second piece of sponge and finish with more ganache on top.
  11. Chill in the refrigerator for at least 15 minutes before serving. Decorate with chocolate shavings if desired.
