Ingredients
- Puff pastry - 250 grams
- Milk - 250 ml
- Granulated sugar - 50 grams
- Egg yolks - 2
- Cornstarch - 25 grams
- Vanilla extract - 1 teaspoon
- Butter - 30 grams
- Powdered sugar - for dusting
- Dark chocolate - 20 grams (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry to about 3mm thick, then cut into 3 equal rectangles. Prick the surface with a fork to prevent puffing too much.
- Place the pastry on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown. Once done, let it cool completely.
- In a saucepan, heat the milk and half of the sugar over medium heat until just boiling.
- In a bowl, whisk together the egg yolks, remaining sugar, and cornstarch until smooth.
- Slowly pour the hot milk into the egg mixture while whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5 minutes.
- Remove from heat and stir in the vanilla extract and butter. Let the cream cool to room temperature.
- Once the pastry and cream are cool, assemble the mille-feuille by placing a layer of pastry on a plate, spreading half of the pastry cream on top, followed by another layer of pastry.
- Repeat with the remaining pastry and cream, finishing with a pastry layer.
- Dust the top with powdered sugar and melt the dark chocolate to drizzle over the top for garnish.
- Chill in the refrigerator for at least 30 minutes before serving.
