Ingredients

  • Almond flour - 100 grams
  • Icing sugar - 100 grams
  • Egg whites - 70 grams (about 2 large eggs)
  • Granulated sugar - 50 grams
  • Food coloring - a few drops (optional)
  • Butter - 100 grams (for filling)
  • Powdered sugar - 50 grams (for filling)
  • Vanilla extract - 1 teaspoon (for filling)

Steps

  1. Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
  2. In a bowl, sift together the almond flour and icing sugar to remove any lumps.
  3. In a separate bowl, whisk the egg whites until foamy, then gradually add the granulated sugar, whisking until stiff peaks form.
  4. If using, add a few drops of food coloring to the egg whites and gently fold until evenly colored.
  5. Gently fold the almond flour mixture into the egg whites in three parts, being careful not to deflate the mixture.
  6. Transfer the batter to a piping bag fitted with a round tip and pipe small circles (about 3-4 cm in diameter) onto the prepared baking sheets, leaving space between each macaron.
  7. Tap the baking sheets gently on the counter to release any air bubbles and let the piped macarons sit at room temperature for 30 minutes until a skin forms.
  8. Bake the macarons in the preheated oven for 15-20 minutes or until they have risen and formed a 'foot'. Allow them to cool completely on the baking sheets.
  9. While the macarons cool, prepare the filling by creaming the butter in a bowl until smooth, then gradually add the powdered sugar and vanilla extract, mixing until well combined.
  10. Once the macarons are cool, pair them up by size and pipe or spread the filling onto one macaron of each pair, then gently sandwich them together.
