- Icing sugar - 100 grams
- Egg whites - 70 grams (about 2 large eggs)
- Granulated sugar - 50 grams
- Food coloring - a few drops (optional)
- Butter - 100 grams (for filling)
- Powdered sugar - 50 grams (for filling)
- Vanilla extract - 1 teaspoon (for filling)
Steps
- Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
- In a bowl, sift together the almond flour and icing sugar to remove any lumps.
- In a separate bowl, whisk the egg whites until foamy, then gradually add the granulated sugar, whisking until stiff peaks form.
- If using, add a few drops of food coloring to the egg whites and gently fold until evenly colored.
- Gently fold the almond flour mixture into the egg whites in three parts, being careful not to deflate the mixture.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles (about 3-4 cm in diameter) onto the prepared baking sheets, leaving space between each macaron.
- Tap the baking sheets gently on the counter to release any air bubbles and let the piped macarons sit at room temperature for 30 minutes until a skin forms.
- Bake the macarons in the preheated oven for 15-20 minutes or until they have risen and formed a 'foot'. Allow them to cool completely on the baking sheets.
- While the macarons cool, prepare the filling by creaming the butter in a bowl until smooth, then gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Once the macarons are cool, pair them up by size and pipe or spread the filling onto one macaron of each pair, then gently sandwich them together.
