Ingredients
- Puff pastry - 250 grams
- Goat cheese - 100 grams
- Spinach - 100 grams
- Cherry tomatoes - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Flour - for dusting
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3 mm thickness and cut into two squares, approximately 15 cm x 15 cm.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the cooked spinach, crumbled goat cheese, chopped basil, salt, and black pepper. Mix until well combined.
- Place half of the vegetable and cheese mixture in the center of each puff pastry square, folding the edges over to create a pocket. Seal the edges with a fork.
- Beat the egg and brush it over the tops of the pastry pockets for a golden finish.
- Place the filled pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
- While the pastries bake, halve the cherry tomatoes and toss them in a little olive oil, salt, and pepper.
- Remove the pastries from the oven, let them cool slightly, and serve with the seasoned cherry tomatoes on the side.
