Ingredients

  • Puff pastry - 250 grams
  • Goat cheese - 100 grams
  • Spinach - 100 grams
  • Cherry tomatoes - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour - for dusting

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 3 mm thickness and cut into two squares, approximately 15 cm x 15 cm.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a bowl, combine the cooked spinach, crumbled goat cheese, chopped basil, salt, and black pepper. Mix until well combined.
  6. Place half of the vegetable and cheese mixture in the center of each puff pastry square, folding the edges over to create a pocket. Seal the edges with a fork.
  7. Beat the egg and brush it over the tops of the pastry pockets for a golden finish.
  8. Place the filled pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  9. While the pastries bake, halve the cherry tomatoes and toss them in a little olive oil, salt, and pepper.
  10. Remove the pastries from the oven, let them cool slightly, and serve with the seasoned cherry tomatoes on the side.
