- Baking powder - 1 teaspoon
- Fresh berries (for topping) - 100 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine flour, granulated sugar, and baking powder.
- Cut in the margarine until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In another bowl, mix almond flour, powdered sugar, vanilla extract, and egg substitute until smooth to create the almond cream filling.
- Roll out the chilled dough on a floured surface to about 0.5 cm thickness.
- Cut into circles or squares and place half on a baking sheet lined with parchment paper.
- Spoon a small amount of almond cream filling onto each pastry piece, then cover with the remaining pastry pieces.
- Seal the edges with a fork and make a few slits on top for steam to escape.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly, dust with powdered sugar, and serve with fresh berries on top.
