Ingredients

  • Water - 100 ml
  • Butter - 50 g
  • Gluten-free all-purpose flour - 75 g
  • Eggs - 2 large
  • Granulated sugar - 50 g
  • Milk - 250 ml
  • Vanilla extract - 1 tsp
  • Cornstarch - 20 g
  • Egg yolks - 2
  • Salt - 1/4 tsp
  • Granulated sugar (for caramel) - 100 g
  • Heavy cream - 100 ml

Steps

  1. In a saucepan, combine water and butter. Bring to a boil and add gluten-free flour, stirring until the mixture forms a ball.
  2. Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition until smooth and glossy.
  3. Preheat the oven to 200°C (400°F). Pipe small choux pastry balls onto a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until golden brown and puffed. Let cool completely.
  5. In another saucepan, heat milk and vanilla extract until just boiling. In a bowl, whisk together sugar, cornstarch, egg yolks, and salt.
  6. Slowly pour the hot milk into the egg mixture while whisking continuously, then return to the saucepan and cook until thickened.
  7. Once thick, remove from heat and let cool, then whisk in heavy cream for added richness.
  8. Fill the cooled choux pastries with the pastry cream using a piping bag.
  9. For the caramel, heat sugar in a dry saucepan over medium heat until it melts and turns golden brown. Be careful not to burn.
  10. Dip the tops of each filled choux pastry into the caramel and place them upright on a plate. Serve immediately.
