- Gluten-free all-purpose flour - 75 g
- Eggs - 2 large
- Granulated sugar - 50 g
- Milk - 250 ml
- Vanilla extract - 1 tsp
- Cornstarch - 20 g
- Egg yolks - 2
- Salt - 1/4 tsp
- Granulated sugar (for caramel) - 100 g
- Heavy cream - 100 ml
Steps
- In a saucepan, combine water and butter. Bring to a boil and add gluten-free flour, stirring until the mixture forms a ball.
- Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition until smooth and glossy.
- Preheat the oven to 200°C (400°F). Pipe small choux pastry balls onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and puffed. Let cool completely.
- In another saucepan, heat milk and vanilla extract until just boiling. In a bowl, whisk together sugar, cornstarch, egg yolks, and salt.
- Slowly pour the hot milk into the egg mixture while whisking continuously, then return to the saucepan and cook until thickened.
- Once thick, remove from heat and let cool, then whisk in heavy cream for added richness.
- Fill the cooled choux pastries with the pastry cream using a piping bag.
- For the caramel, heat sugar in a dry saucepan over medium heat until it melts and turns golden brown. Be careful not to burn.
- Dip the tops of each filled choux pastry into the caramel and place them upright on a plate. Serve immediately.
