  • Vanilla extract - 1 teaspoon
  • Milk - 2 tablespoons
  • Dates - 75 grams, pitted and chopped
  • Pistachios - 30 grams, roughly chopped
  • Cardamom powder - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine almond flour, all-purpose flour, powdered sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add in the egg and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk, until a dough forms.
  5. In a separate bowl, mix the chopped dates, pistachios, and cardamom powder to create the filling.
  6. Roll out the dough on a floured surface to about 0.5 cm thickness. Cut out circles of about 8 cm in diameter.
  7. Place a teaspoon of the filling in the center of each circle and fold the dough over to form a half-moon shape, sealing the edges with a fork.
  8. Arrange the pastries on the prepared baking tray and bake for 20-25 minutes or until golden brown.
  9. Allow to cool slightly before serving. Dust with powdered sugar for an extra touch.
