- Fresh berries (mixed) - 150 grams
- Coconut oil (for cooking) - 1 tablespoon
Steps
- In a mixing bowl, combine the almond flour, baking powder, ground cinnamon, and a pinch of salt.
- In another bowl, whisk together the eggs, coconut milk, and honey until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until just combined.
- Fold in the grated apple until evenly distributed in the batter.
- Heat a skillet over medium heat and add coconut oil.
- Pour a small ladle of batter onto the skillet for each pancake, cooking for 2-3 minutes on each side until golden brown.
- Repeat until all the batter is used, adding more coconut oil to the skillet as needed.
- Serve the pancakes warm, topped with fresh mixed berries.
