  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Fresh berries (mixed) - 150 grams
  • Coconut oil (for cooking) - 1 tablespoon

Steps

  1. In a mixing bowl, combine the almond flour, baking powder, ground cinnamon, and a pinch of salt.
  2. In another bowl, whisk together the eggs, coconut milk, and honey until smooth.
  3. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
  4. Fold in the grated apple until evenly distributed in the batter.
  5. Heat a skillet over medium heat and add coconut oil.
  6. Pour a small ladle of batter onto the skillet for each pancake, cooking for 2-3 minutes on each side until golden brown.
  7. Repeat until all the batter is used, adding more coconut oil to the skillet as needed.
  8. Serve the pancakes warm, topped with fresh mixed berries.
