Ingredients

  • All-purpose flour - 150 grams
  • Unsalted butter - 75 grams, cold and cubed
  • Powdered sugar - 30 grams
  • Almond flour - 50 grams
  • Granulated sugar - 30 grams
  • Ground cinnamon - 1 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large (for egg wash)
  • Salt - 1/4 teaspoon
  • Water - 2 tablespoons (cold)

Steps

  1. In a large bowl, combine the all-purpose flour, powdered sugar, and salt. Add the cold cubed butter and rub it into the flour mixture until it resembles coarse crumbs.
  2. Gradually add the cold water and mix until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. While the dough chills, prepare the filling by mixing almond flour, granulated sugar, ground cinnamon, ground nutmeg, and vanilla extract in a bowl until well combined.
  4. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface to about 3mm thick.
  5. Cut the dough into circles (about 10 cm in diameter) and place a tablespoon of the almond filling in the center of each circle.
  6. Fold the dough over to create a semi-circle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  7. Beat the egg and brush it over the tops of the pastries for a golden finish.
  8. Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly before dusting with powdered sugar before serving.
