- All-purpose flour - 150 grams
- Unsalted butter - 75 grams, cold and cubed
- Powdered sugar - 30 grams
- Almond flour - 50 grams
- Granulated sugar - 30 grams
- Ground cinnamon - 1 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Egg - 1 large (for egg wash)
- Salt - 1/4 teaspoon
- Water - 2 tablespoons (cold)
Steps
- In a large bowl, combine the all-purpose flour, powdered sugar, and salt. Add the cold cubed butter and rub it into the flour mixture until it resembles coarse crumbs.
- Gradually add the cold water and mix until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, prepare the filling by mixing almond flour, granulated sugar, ground cinnamon, ground nutmeg, and vanilla extract in a bowl until well combined.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface to about 3mm thick.
- Cut the dough into circles (about 10 cm in diameter) and place a tablespoon of the almond filling in the center of each circle.
- Fold the dough over to create a semi-circle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Beat the egg and brush it over the tops of the pastries for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before dusting with powdered sugar before serving.
