- Coconut oil - 30 grams (melted)
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Lemon zest - 1 teaspoon
- Chopped walnuts - 30 grams (optional)
Steps
- Preheat your oven to 180°C (350°F) and grease two ramekins with a little coconut oil.
- In a large mixing bowl, combine the almond flour, whole wheat flour, baking powder, and salt.
- In a separate bowl, whisk together the agave syrup, almond milk, melted coconut oil, vanilla extract, and lemon zest until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold in the chopped walnuts if using.
- Divide the batter evenly between the two prepared ramekins.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
