  • Agave syrup - 60 ml
  • Unsweetened almond milk - 100 ml
  • Coconut oil - 30 grams (melted)
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Lemon zest - 1 teaspoon
  • Chopped walnuts - 30 grams (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and grease two ramekins with a little coconut oil.
  2. In a large mixing bowl, combine the almond flour, whole wheat flour, baking powder, and salt.
  3. In a separate bowl, whisk together the agave syrup, almond milk, melted coconut oil, vanilla extract, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the chopped walnuts if using.
  6. Divide the batter evenly between the two prepared ramekins.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
