  • Mushrooms (cremini) - 150 grams, sliced
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Gluten-free chicken broth - 150 ml

Steps

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the chopped shallots and minced garlic, sautéing until translucent, about 3 minutes.
  3. Add the sliced mushrooms to the skillet, cooking until they are browned and tender, about 5-7 minutes.
  4. Season the mushrooms with salt, black pepper, and thyme, stirring well to combine.
  5. In the meantime, season the chicken breast with salt and pepper on both sides.
  6. Push the mushrooms to the side of the skillet and add the chicken breast, searing for 4-5 minutes on each side until golden brown.
  7. Pour in the gluten-free chicken broth, bringing it to a simmer, and cover the skillet.
  8. Cook for an additional 10 minutes or until the chicken reaches an internal temperature of 75°C (165°F).
  9. Remove the chicken from the skillet and let it rest for a few minutes.
  10. Stir the heavy cream into the mushroom mixture, allowing it to simmer for 2-3 minutes to thicken slightly.
  11. Slice the chicken and serve it drizzled with the creamy mushroom sauce, garnished with fresh thyme.
