- Heavy cream - 100 ml
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Gluten-free chicken broth - 150 ml
Steps
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the chopped shallots and minced garlic, sautéing until translucent, about 3 minutes.
- Add the sliced mushrooms to the skillet, cooking until they are browned and tender, about 5-7 minutes.
- Season the mushrooms with salt, black pepper, and thyme, stirring well to combine.
- In the meantime, season the chicken breast with salt and pepper on both sides.
- Push the mushrooms to the side of the skillet and add the chicken breast, searing for 4-5 minutes on each side until golden brown.
- Pour in the gluten-free chicken broth, bringing it to a simmer, and cover the skillet.
- Cook for an additional 10 minutes or until the chicken reaches an internal temperature of 75°C (165°F).
- Remove the chicken from the skillet and let it rest for a few minutes.
- Stir the heavy cream into the mushroom mixture, allowing it to simmer for 2-3 minutes to thicken slightly.
- Slice the chicken and serve it drizzled with the creamy mushroom sauce, garnished with fresh thyme.
