Ingredients

  • Puff pastry - 250 grams
  • Almond flour - 100 grams
  • Granulated sugar - 75 grams
  • Butter (softened) - 50 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Milk - 2 tablespoons
  • Fresh raspberries - 100 grams
  • Powdered sugar - for dusting

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 3mm thick and cut into two 15cm squares.
  3. In a mixing bowl, combine almond flour, granulated sugar, softened butter, egg, vanilla extract, and milk until smooth to create the almond cream.
  4. Place a generous spoonful of almond cream in the center of each puff pastry square, leaving a border around the edges.
  5. Fold the edges of the pastry over the filling to create a sealed parcel, pinching the edges to secure.
  6. Place the parcels on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown.
  7. Allow to cool slightly before dusting with powdered sugar and topping with fresh raspberries.
