- Puff pastry - 250 grams
- Almond flour - 100 grams
- Granulated sugar - 75 grams
- Butter (softened) - 50 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Milk - 2 tablespoons
- Fresh raspberries - 100 grams
- Powdered sugar - for dusting
Steps
- Preheat your oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3mm thick and cut into two 15cm squares.
- In a mixing bowl, combine almond flour, granulated sugar, softened butter, egg, vanilla extract, and milk until smooth to create the almond cream.
- Place a generous spoonful of almond cream in the center of each puff pastry square, leaving a border around the edges.
- Fold the edges of the pastry over the filling to create a sealed parcel, pinching the edges to secure.
- Place the parcels on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown.
- Allow to cool slightly before dusting with powdered sugar and topping with fresh raspberries.
