Ingredients

  • roasted chestnuts - 200 grams, peeled
  • all-purpose flour - 150 grams
  • unsalted butter - 100 grams, softened
  • granulated sugar - 50 grams
  • egg - 1 large, beaten
  • milk - 100 ml
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • fresh thyme - 1 teaspoon, chopped
  • cremini mushrooms - 150 grams, sliced
  • heavy cream - 100 ml
  • olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the beaten egg and milk to the butter mixture, mixing until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until a dough forms.
  6. Fold in the roasted chestnuts and fresh thyme until evenly distributed.
  7. Transfer the dough to a floured surface and roll it out to about 1 cm thickness. Cut into desired shapes using cookie cutters or a knife.
  8. Place the cut pastry shapes on a baking tray lined with parchment paper and bake for 25-30 minutes until golden brown.
  9. While the pastries are baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are softened.
  10. Pour in the heavy cream, stirring constantly, and let it simmer for another 5 minutes until thickened. Season with salt and pepper to taste.
  11. Once the pastries are out of the oven, serve them warm drizzled with the mushroom cream sauce.
