- roasted chestnuts - 200 grams, peeled
- all-purpose flour - 150 grams
- unsalted butter - 100 grams, softened
- granulated sugar - 50 grams
- egg - 1 large, beaten
- milk - 100 ml
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- fresh thyme - 1 teaspoon, chopped
- cremini mushrooms - 150 grams, sliced
- heavy cream - 100 ml
- olive oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
- In another bowl, cream the softened butter and sugar together until light and fluffy.
- Add the beaten egg and milk to the butter mixture, mixing until well combined.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until a dough forms.
- Fold in the roasted chestnuts and fresh thyme until evenly distributed.
- Transfer the dough to a floured surface and roll it out to about 1 cm thickness. Cut into desired shapes using cookie cutters or a knife.
- Place the cut pastry shapes on a baking tray lined with parchment paper and bake for 25-30 minutes until golden brown.
- While the pastries are baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are softened.
- Pour in the heavy cream, stirring constantly, and let it simmer for another 5 minutes until thickened. Season with salt and pepper to taste.
- Once the pastries are out of the oven, serve them warm drizzled with the mushroom cream sauce.
