  • Chickpea flour - 30 grams
  • Egg - 1 large
  • Fresh parsley - 15 grams, chopped
  • Fresh chives - 15 grams, chopped
  • Garlic - 1 clove, minced
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the grated carrots, all-purpose flour, chickpea flour, baking powder, minced garlic, chopped parsley, chopped chives, salt, and black pepper.
  3. In a separate bowl, whisk the egg and then add it to the dry ingredients, mixing until well combined.
  4. Shape the mixture into small patties, approximately 5 cm in diameter.
  5. Heat olive oil in a non-stick frying pan over medium heat. Cook the patties for about 3-4 minutes on each side until golden brown.
  6. Transfer the cooked patties to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
  7. While the patties are baking, prepare the yogurt dip by mixing the Greek yogurt, lemon juice, cumin powder, and a pinch of salt in a small bowl.
  8. Serve the warm carrot patties with the yogurt dip on the side.
