- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Cumin powder - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the grated carrots, all-purpose flour, chickpea flour, baking powder, minced garlic, chopped parsley, chopped chives, salt, and black pepper.
- In a separate bowl, whisk the egg and then add it to the dry ingredients, mixing until well combined.
- Shape the mixture into small patties, approximately 5 cm in diameter.
- Heat olive oil in a non-stick frying pan over medium heat. Cook the patties for about 3-4 minutes on each side until golden brown.
- Transfer the cooked patties to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
- While the patties are baking, prepare the yogurt dip by mixing the Greek yogurt, lemon juice, cumin powder, and a pinch of salt in a small bowl.
- Serve the warm carrot patties with the yogurt dip on the side.
