Ingredients
- Water - 125 ml
- Unsalted margarine - 50 g
- All-purpose flour - 75 g
- Eggs - 2 large
- Sugar - 15 g
- Vanilla extract - 5 ml
- Salt - 1 g
- Pastry cream - 200 g
- Dark chocolate (dairy-free) - 100 g
- Coconut oil - 10 g
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a saucepan, combine water and margarine over medium heat until the margarine is melted.
- Add flour and salt to the saucepan, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Remove from heat and let cool for 5 minutes. Then, add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a large round tip. Pipe 10 cm long strips onto the prepared baking tray, leaving space between each.
- Bake in the preheated oven for 25-30 minutes or until golden brown and puffed. Do not open the oven door during baking.
- While the éclairs cool, prepare the pastry cream by mixing sugar, vanilla extract, and prepared cream together until smooth.
- Once the éclairs are completely cooled, use a small knife to make a hole at each end and pipe the pastry cream inside.
- To make the glaze, melt the dark chocolate and coconut oil together in a heatproof bowl over simmering water, stirring until smooth.
- Dip the top of each filled éclair into the chocolate glaze, allowing excess to drip off. Place on a wire rack to set.
- Serve chilled or at room temperature.
