Ingredients

  • Water - 250 ml
  • Unsalted Kosher butter - 100 g
  • All-purpose flour - 150 g
  • Large eggs - 3
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Chopped fresh parsley - 2 tbsp
  • Grated cheese (like Gruyère) - 50 g
  • Roasted bell pepper, diced - 50 g
  • Zucchini, finely grated - 50 g

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the water, butter, and salt. Bring to a boil over medium heat.
  3. Once boiling, remove from heat and quickly stir in the flour until a smooth dough forms.
  4. Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is glossy and smooth.
  5. Stir in the black pepper, garlic powder, parsley, cheese, diced bell pepper, and grated zucchini.
  6. Using a piping bag or a spoon, form small mounds of dough (about the size of a golf ball) on the prepared baking sheet, leaving space between each.
  7. Bake in the preheated oven for 25-30 minutes or until the pastries are golden brown and puffed up.
  8. Remove from the oven and let cool slightly before serving.
