Ingredients

  • Puff pastry - 250 grams
  • Mixed seasonal fruits (strawberries, blueberries, kiwi) - 200 grams
  • Granulated sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Egg (for egg wash) - 1
  • Powdered sugar (for dusting) - 10 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
  3. Cut the pastry into two rectangles, approximately 15cm x 10cm each.
  4. In a medium bowl, combine the mixed seasonal fruits, granulated sugar, vanilla extract, and cornstarch. Gently mix until the fruits are coated.
  5. Spoon half of the fruit mixture onto the center of each pastry rectangle, leaving a border of about 2cm around the edges.
  6. Fold the edges of the pastry over the fruit filling to create a rectangular parcel, pressing the edges to seal.
  7. Beat the egg and brush it over the top of each pastry for a golden finish.
  8. Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
