Ingredients
- Puff pastry - 250 grams
- Mixed seasonal fruits (strawberries, blueberries, kiwi) - 200 grams
- Granulated sugar - 30 grams
- Vanilla extract - 1 teaspoon
- Cornstarch - 1 tablespoon
- Egg (for egg wash) - 1
- Powdered sugar (for dusting) - 10 grams
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
- Cut the pastry into two rectangles, approximately 15cm x 10cm each.
- In a medium bowl, combine the mixed seasonal fruits, granulated sugar, vanilla extract, and cornstarch. Gently mix until the fruits are coated.
- Spoon half of the fruit mixture onto the center of each pastry rectangle, leaving a border of about 2cm around the edges.
- Fold the edges of the pastry over the fruit filling to create a rectangular parcel, pressing the edges to seal.
- Beat the egg and brush it over the top of each pastry for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
