These gluten-free almond and orange blossom cookies are a delightful French snack, perfectly crisp on the outside and soft on the inside. Infused with the floral notes of orange blossom water, they offer a unique twist to traditional French pâtisserie.

Ingredients
- Almond flour - 150 grams
- Powdered sugar - 100 grams
- Egg whites - 2 large
- Orange blossom water - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Sliced almonds - for garnish
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, powdered sugar, baking powder, and salt.
- In a separate bowl, beat the egg whites until soft peaks form.
- Gently fold the beaten egg whites into the dry mixture, then add the orange blossom water and vanilla extract.
- Mix until just combined, being careful not to deflate the egg whites.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 5 cm apart.
- Garnish each cookie with a few sliced almonds on top.
- Bake in the preheated oven for 15-18 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
