Ingredients

  • Gluten-free pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Cherry tomatoes - 200 grams, halved
  • Black olives - 50 grams, pitted and sliced
  • Fresh basil - 10 grams, chopped
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for about 5-7 minutes until they are tender.
  4. Stir in the halved cherry tomatoes and black olives, cooking for an additional 3-4 minutes until the tomatoes start to soften.
  5. Add the cooked pasta to the skillet, tossing everything together. Season with dried thyme, salt, and black pepper to taste.
  6. Remove from heat and fold in the fresh basil. Serve hot, topped with grated Parmesan cheese if desired.
