- Gluten-free pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Cherry tomatoes - 200 grams, halved
- Black olives - 50 grams, pitted and sliced
- Fresh basil - 10 grams, chopped
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for about 5-7 minutes until they are tender.
- Stir in the halved cherry tomatoes and black olives, cooking for an additional 3-4 minutes until the tomatoes start to soften.
- Add the cooked pasta to the skillet, tossing everything together. Season with dried thyme, salt, and black pepper to taste.
- Remove from heat and fold in the fresh basil. Serve hot, topped with grated Parmesan cheese if desired.
