- Shallot - 1, finely chopped
- Garlic - 1 clove, minced
- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Fresh truffle (or truffle oil) - 10 grams (or 1 teaspoon for oil)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant, being careful not to burn it.
- Pour in the heavy cream and stir well. Allow it to simmer gently for about 3-4 minutes until slightly thickened.
- Stir in the grated Parmesan cheese until melted and combined, then season with salt and black pepper to taste.
- If using fresh truffle, shave it directly into the sauce, or if using truffle oil, drizzle it in and mix well.
- Add the cooked pasta to the skillet, tossing it in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
- Serve immediately, garnished with chopped fresh parsley and additional shaved truffle if desired.
