Ingredients

  • Shallot - 1, finely chopped
  • Garlic - 1 clove, minced
  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Fresh truffle (or truffle oil) - 10 grams (or 1 teaspoon for oil)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant, being careful not to burn it.
  4. Pour in the heavy cream and stir well. Allow it to simmer gently for about 3-4 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese until melted and combined, then season with salt and black pepper to taste.
  6. If using fresh truffle, shave it directly into the sauce, or if using truffle oil, drizzle it in and mix well.
  7. Add the cooked pasta to the skillet, tossing it in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
  8. Serve immediately, garnished with chopped fresh parsley and additional shaved truffle if desired.
