  • Pine nuts - 30 grams
  • Garlic - 1 clove
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 20 grams (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the sauce by placing the basil, spinach, pine nuts, garlic, olive oil, lemon juice, salt, and pepper in a food processor.
  3. Blend the mixture until smooth, adding a bit of water if necessary to achieve a creamy consistency.
  4. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta.
