Ingredients
- Pasta (spaghetti or penne) - 160 grams
- Fresh tomatoes - 400 grams, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 leaves, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the diced tomatoes, salt, and black pepper. Cook for 10-12 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomato sauce.
- Toss the pasta in the sauce, adding a little reserved pasta water if needed to achieve a creamy consistency.
- Stir in the chopped basil and cook for an additional 1-2 minutes to combine the flavors.
- Serve immediately, topped with grated Parmesan cheese if desired.
