- Carrot - 1 medium, grated
- Canned whole tomatoes - 400 grams
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, torn
- Parmesan cheese - for serving (optional)
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sauté for 3-4 minutes until soft and fragrant.
- Add the grated carrot to the skillet and cook for another 2 minutes, stirring occasionally.
- Pour in the canned whole tomatoes, breaking them up with a spoon. Add the tomato paste, dried oregano, salt, and black pepper. Stir well to combine.
- Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally, until it thickens slightly.
- Add the cooked pasta to the sauce, tossing to coat the pasta evenly. Cook for an additional 2 minutes to heat through.
- Remove from heat and stir in the torn fresh basil.
- Serve hot, with grated Parmesan cheese on top if desired.
