  • Carrot - 1 medium, grated
  • Canned whole tomatoes - 400 grams
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, torn
  • Parmesan cheese - for serving (optional)

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sauté for 3-4 minutes until soft and fragrant.
  3. Add the grated carrot to the skillet and cook for another 2 minutes, stirring occasionally.
  4. Pour in the canned whole tomatoes, breaking them up with a spoon. Add the tomato paste, dried oregano, salt, and black pepper. Stir well to combine.
  5. Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally, until it thickens slightly.
  6. Add the cooked pasta to the sauce, tossing to coat the pasta evenly. Cook for an additional 2 minutes to heat through.
  7. Remove from heat and stir in the torn fresh basil.
  8. Serve hot, with grated Parmesan cheese on top if desired.
