  • Heavy cream - 150 ml
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste
  • Walnuts (optional) - 30 grams, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Lower the heat and pour in the heavy cream, stirring gently. Add the Roquefort cheese, breaking it into smaller pieces as it melts into the cream.
  4. Season the sauce with black pepper and salt to taste. If using, add the chopped walnuts and mix well.
  5. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta. Add the drained pasta directly to the sauce, tossing to coat the pasta evenly.
  6. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  7. Remove from heat, stir in the chopped parsley, and serve immediately, garnished with additional parsley if desired.
