- Heavy cream - 150 ml
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
- Salt - to taste
- Walnuts (optional) - 30 grams, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Lower the heat and pour in the heavy cream, stirring gently. Add the Roquefort cheese, breaking it into smaller pieces as it melts into the cream.
- Season the sauce with black pepper and salt to taste. If using, add the chopped walnuts and mix well.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta. Add the drained pasta directly to the sauce, tossing to coat the pasta evenly.
- If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Remove from heat, stir in the chopped parsley, and serve immediately, garnished with additional parsley if desired.
