- Pasta (fettuccine or tagliatelle) - 200 grams
- Dried cèpes (porcini mushrooms) - 30 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Vegetable broth - 200 ml
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the dried cèpes in warm water for about 15 minutes until rehydrated. Drain and chop them finely, reserving the soaking liquid.
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and garlic, sautéing until translucent and fragrant, about 3 minutes.
- Add the chopped cèpes to the skillet and cook for another 5 minutes until they are soft and fragrant.
- Pour in the vegetable broth and the reserved soaking liquid from the cèpes. Let it simmer for 5 minutes to reduce slightly.
- Stir in the heavy cream, and bring to a gentle simmer. Cook for another 5 minutes until the sauce thickens. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Remove from heat and stir in the grated Parmesan and chopped parsley. Serve immediately, garnished with additional Parmesan if desired.
