Ingredients

  • Pasta (fettuccine or tagliatelle) - 200 grams
  • Dried cèpes (porcini mushrooms) - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Vegetable broth - 200 ml
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried cèpes in warm water for about 15 minutes until rehydrated. Drain and chop them finely, reserving the soaking liquid.
  2. Cook the pasta according to package instructions in salted boiling water until al dente. Drain, reserving a cup of pasta water.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and garlic, sautéing until translucent and fragrant, about 3 minutes.
  4. Add the chopped cèpes to the skillet and cook for another 5 minutes until they are soft and fragrant.
  5. Pour in the vegetable broth and the reserved soaking liquid from the cèpes. Let it simmer for 5 minutes to reduce slightly.
  6. Stir in the heavy cream, and bring to a gentle simmer. Cook for another 5 minutes until the sauce thickens. Season with salt and black pepper to taste.
  7. Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  8. Remove from heat and stir in the grated Parmesan and chopped parsley. Serve immediately, garnished with additional Parmesan if desired.
