  • Walnuts - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 30 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant. Remove from heat and let cool slightly.
  3. In a food processor, combine the toasted walnuts, minced garlic, olive oil, a pinch of salt, and black pepper. Blend until a smooth paste is formed, adding a little water if necessary to reach a creamy consistency.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  5. In the pot, combine the drained pasta with the walnut sauce. Add the reserved pasta water a little at a time until the desired creaminess is achieved.
  6. Stir in the chopped parsley and grated Parmesan cheese, mixing well to combine. Adjust seasoning with more salt and pepper if needed.
  7. Serve immediately, garnished with additional Parmesan and parsley if desired.
