- Walnuts - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 30 grams, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant. Remove from heat and let cool slightly.
- In a food processor, combine the toasted walnuts, minced garlic, olive oil, a pinch of salt, and black pepper. Blend until a smooth paste is formed, adding a little water if necessary to reach a creamy consistency.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- In the pot, combine the drained pasta with the walnut sauce. Add the reserved pasta water a little at a time until the desired creaminess is achieved.
- Stir in the chopped parsley and grated Parmesan cheese, mixing well to combine. Adjust seasoning with more salt and pepper if needed.
- Serve immediately, garnished with additional Parmesan and parsley if desired.
