- Gluten-free pasta - 200 grams
- Canned sardines in olive oil - 1 can (about 120 grams)
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Sea salt - to taste
- Black pepper - to taste
- Red pepper flakes - optional, to taste
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Add the canned sardines (drained, if desired) to the skillet, breaking them into pieces gently. Stir to combine with the tomatoes and garlic.
- Add the cooked gluten-free pasta to the skillet and toss everything together. Squeeze in the lemon juice and season with sea salt, black pepper, and red pepper flakes if using.
- Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
