Ingredients

  • Gluten-free pasta - 200 grams
  • Canned sardines in olive oil - 1 can (about 120 grams)
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Add the canned sardines (drained, if desired) to the skillet, breaking them into pieces gently. Stir to combine with the tomatoes and garlic.
  5. Add the cooked gluten-free pasta to the skillet and toss everything together. Squeeze in the lemon juice and season with sea salt, black pepper, and red pepper flakes if using.
  6. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
